The Rabbit Hole Cavehill Bourbon Whiskey is a modern, four-grain Kentucky straight bourbon that blends innovation with traditional craftsmanship. Rich yet approachable, it showcases a layered profile of honeyed sweetness, orchard fruit, and warm spice supported by a silky texture and balanced oak influence. As Rabbit Hole’s flagship expression, Cavehill is designed to highlight a unique mash bill and meticulous small-batch blending—making it a compelling contemporary bourbon for both seasoned enthusiasts and curious newcomers.
Origins & Craftsmanship
Rabbit Hole Distillery was founded in Louisville, Kentucky by Kaveh Zamanian, a former clinical psychologist who pursued a vision of creating modern American whiskey with distinctive grain recipes and precise production methods.
-
Mash Bill Innovation
- Cavehill uses an unusual four-grain mash bill composed of 70% corn, 10% malted wheat, 10% honey malted barley, and 10% malted barley.
- The inclusion of honey-malted barley adds sweetness and aromatic complexity rarely found in traditional bourbon mash bills.
-
Fermentation & Distillation
- Distilled in Kentucky using carefully controlled fermentation designed to preserve delicate grain-derived flavors.
-
Barrel Aging
- Matured in new American oak barrels that are both toasted and charred, a technique that develops layered vanilla, caramel, and baking spice while maintaining balance.
-
Small-Batch Blending
- Bottled in batches of no more than about 15 barrels, ensuring consistency and depth of flavor.
-
Bottling Strength
- 95 proof (47.5% ABV), providing a fuller mouthfeel and richer flavor profile than many standard bourbons.
The name “Cavehill” pays tribute to Cave Hill Cemetery in Louisville, a historic landmark near the distillery and a nod to the city’s deep whiskey heritage.
